Nani’s Hasen Ohren (Rabbit Ears) with Kraut (Cabbage) & Fig Jam – Ella Eiter
Hasen Ohren Dough Ingredients:
1 kilogram flour
2 Eggs ½ liter warm milk
120 grams melted butter Pinch of salt Oil for frying Hasen Ohren Instructions:
1. Mix flour and salt together in a bowl.
2. Melt butter in the milk.
3. Mix eggs and the milk and butter mixture
into the dry ingredients with a stand
mixer or by hand.
4. Take out the dough and knead for 15 minutes.
5. Put in a bowl, cover, and rest the dough for at least 30 minutes.
6. Roll out the dough to be 3-4 millimeters thin.
7. Cut out rough squares, triangles or any shape desired.
8. Drop the shapes into pan with oil and fry until they puff up and are golden brown, making sure to cover as much of the dough with oil as possible.
9. Put on paper towels to get rid of excess oil.
Kraut Ingredients:
1 head of cabbage
1 onion (optional)
1 pound of bacon (change amount on preference) ½ cup of water Salt to taste Pepper to taste Caraway seeds to taste Soup stock to taste
4 tablespoons of water
2 tablespoons of cornstarch Hasen Ohren with Kraut Instructions:
1. Chop up the cabbage coarsely.
2. Dice the onion.
3. Slice the bacon into small pieces.
4. Cook bacon on medium high heat in a pot until done.
5. Check the oil, if there’s too much oil from the bacon then take some out but make sure there’s about 2 tablespoons of oil still left since that gives it flavor.
6. Add the onion into the pot and cook until they’re translucent.
7. Add cabbage into the pot and mix.
8. Add your seasoning (salt, pepper, soup stock, caraway seeds).
9. Add ½ cup of water.
10. Put lid on and turn the heat down to medium low to cook the cabbage which should take about 15 minutes and check occasionally.
11. Taste and see if it needs more seasoning.
12. When it tastes good mix together the cornstarch and 4 tablespoons of water in a separate bowl.
13. Add the cornstarch and water mixture with the cabbage and stir it together until it thickens, about 5 minutes.
Hasen Ohren with Fig Jam Ingredients Fig Jam Hasen Ohren dough Hasen Ohren with Fig Jam Instructions:
1. Take the hasen ohren dough and roll out two sheets.
2. On one sheet put dollops of the jam spaced out.
3. Put the second sheet of dough over the first and pinch the edges together.
4. Cut out the shapes around the jam dollops.
5. Fry the hasen ohren until golden brown.
6. Dry off excess oil with paper towel when done.
