¾ cup milk ½ cup sugar
1 ¼ tsp salt ½ cup butter ⅓ cup warm water
2 packages of active dry yeast
3 eggs (room temp)
5 cups of flour Instructions:
1. Scald milk, stir in sugar, salt and butter.
2. Cool to lukewarm.
3. Pour warm water into warm bowl.
4. Sprinkle yeast and stir till dissolved.
5. Add lukewarm milk and eggs to mixture.
6. Add 1 cup of flour at a time slowly till all five are in the bowl.
7. Turn mixer to speed 2 and mix till dough is mixed and clinging to hook.
8. Then wait three minutes and add remains (the yeast in the water).
9. Mix until cleans the side of bowl (5 minutes).
10. Knead on speed 2 for 7-10 minutes or until dough is smooth and elastic.
11. Place in bowl greased with margarine.
12. Turn dough over from bowl.
13. Put down in bowl and other side down.
14. Cover in foil.
15. Put on oven above a pot of boiling water for 1 hour.
16. Put flour on counter and rolling pin.
17. Punch down bread.
18. Divide dough (¼ at a time).
19. Make rectangle and roll it with rolling pin.
20. Cut 8 1-inch pieces and roll into pigeon.
21. Butter the top of the pigeon.
22. Put in oven for 20 minutes at 375 degrees.
